Homemade Thai Green Curry for Lunch 🌿🍛

There is something incredibly satisfying about making Thai green curry at home. Today’s lunch was exactly that. One of the best things about cooking is that you can adapt a recipe to whatever you have available in your kitchen while still creating something delicious and comforting.

For today’s curry, I took inspiration from Jet Tila’s Thai Green Curry recipe and made a few changes to suit the ingredients I had on hand. The result was a rich, creamy, and flavourful curry served with fluffy jasmine rice, perfect for a cosy lunch at home.

My Adaptations

Instead of using sweet potato and red bell pepper as suggested in the original recipe, I substituted them with:

  • Courgette

  • Bamboo shoots

I also added:

  • 2 pieces of palm sugar for extra depth and balance

And because it wasn't available in my kitchen, I omitted:

  • Thai basil

Even with these simple changes, the curry turned out wonderfully aromatic, creamy, and packed with flavour.
