If there is one dish that instantly brings comfort to our home, it is Kanto Style Chicken. It is one of our family's favourite meals and a guaranteed hit with my kids. Crispy, flavourful, affordable, and satisfying, this Filipino classic proves that great food does not need to be expensive or complicated.

What is Kanto Style Chicken?

The word kanto means "street corner" in Filipino. If you have ever visited the Philippines, you will know that almost every neighbourhood has a small food stall or eatery at the corner of the street selling freshly fried chicken, rice, and dipping sauces.

That is exactly where Kanto Style Chicken gets its name.

For many Filipino families, it is one of the most affordable, filling, and convenient meals available. Whether it is lunch, dinner, or a quick takeaway after work, Kanto Style Chicken has been a staple comfort food for generations.

While it may not receive as much attention as other famous Filipino street foods, it is arguably one of the most underrated. In fact, many Filipinos would agree that a freshly cooked piece of Kanto Style Chicken can easily rival, and sometimes even beat, restaurant-style fried chicken.

The recipe I used is inspired by Aby Marquez, one of the Philippines' most popular food content creators.

Since calamansi can be difficult to find in Spain, I made a small adjustment and substituted calamansi and liquid seasoning with Toyomansi, which provides a similar citrus-soy flavour profile and works beautifully in the marinade. I also added some Kikkoman Ponzu for a twist.

The Classic Filipino Dipping Sauce

The traditional dip served with Kanto Style Chicken is wonderfully simple:

  • Onion

  • Sugar

  • Cucumber

The combination creates a perfect balance of tangy, sweet, and savoury flavours that cuts through the richness of the fried chicken.

However, many chicken stalls across the Philippines also serve their own chicken gravy. Some of these gravies have become legendary among locals, and honestly, some are even better than the gravy served by major fast-food chains.

Kanto Style Chicken Recipe

Marinade

Ingredients

  • ½ chicken, cut into serving pieces

  • 2 tbsp garlic, minced

  • 8 to 10 calamansi (or substitute with Toyomansi)

  • 2 tbsp fish sauce

  • 2 packs Knorr Liquid Seasoning

Instructions

  1. In a large bowl, combine garlic, calamansi juice (or Toyomansi), fish sauce, and Knorr Liquid Seasoning.

  2. Add the chicken pieces and massage the marinade into the meat.

  3. Cover and refrigerate for at least 4 hours.

  4. For best results, marinate overnight to allow the flavours to fully penetrate the chicken.

Crispy Breading

Ingredients

  • ¼ cup cornstarch

  • ¼ cup all-purpose flour

  • ½ tsp baking soda

  • 1 egg

  • Cold water as needed

  • ½ tsp turmeric

  • ¼ tsp salt

Instructions

  1. In a bowl, combine cornstarch, flour, baking soda, turmeric, and salt.

  2. Add the egg.

  3. Gradually add cold water while mixing until you achieve a slightly thick batter consistency.

  4. The batter should be thick enough to coat the chicken while remaining light enough to create a crispy crust.

Cooking Procedure

Step 1: Prepare the Chicken

Remove the chicken from the marinade and allow excess liquid to drip off.

Step 2: Coat the Chicken

Dip each piece into the breading mixture, ensuring every surface is evenly coated.

Step 3: Heat the Oil

Heat enough cooking oil in a deep pan to approximately 170°C to 180°C.

The oil should be hot enough to create an immediate sizzle when the chicken is added.

Step 4: Fry the Chicken

Carefully place the chicken into the hot oil.

Fry for approximately 12 to 15 minutes, depending on the size of the pieces, until:

  • Deep golden brown

  • Crispy on the outside

  • Fully cooked inside

Avoid overcrowding the pan to maintain the oil temperature.

Step 5: Rest Before Serving

Place the fried chicken on a wire rack or paper-lined plate to remove excess oil.

Allow it to rest for 3 to 5 minutes before serving.

This helps keep the coating crispy.

Quick Onion Vinegar Dip

Ingredients

  • ½ cup vinegar

  • 1 small red onion, sliced thinly

  • Cucumber

  • 1 tbsp sugar

  • Pinch of black pepper

  • Fish sauce

Instructions

  1. Combine all ingredients in a small bowl.

  2. Stir until the sugar dissolves.

  3. Let sit for 10 to 15 minutes before serving.

The onions absorb the vinegar while mellowing slightly, creating the perfect accompaniment to crispy fried chicken.
